This was a hit among the staff in the test kitchen. The simplicity of this dish was so amazing that all the flavors just fell into one harmonious meal.
This bowl has shredded sweet potato, onions, bell pepper, garlic, olive oil, kale, salt, pepper, and balsamic vinegar. Topped onto a bed of quinoa. So delicious!
